Learning Objectives

The course aims to provide students with the chemical and biochemical basis for the understanding of nutrition science. In particular, at the end of the course, the student will be aware of the structure, function, the nutritional value of macronutrients, vitamins and minerals. The student will also have knowledge about the process of digestion and absorption of carbohydrates, lipids, proteins and alcohol, and major metabolic pathways for the extraction of energy from nutrients. The metabolic regulation, through control of the enzymatic activity, and mediated by hormones, it will eventually fundamental training objective.to provide knowledge about the biochemical properties of macronutrients, micronutrients and non-nutrients found in food, o on food and nutritional characteristics of pathological effects due to incorrect nutrition.


Course Structure

The course includes 42 hours of frontal (or remote) traditional lecture and exposure and debates among students on research, case studies or topics by power point presentation.

As a guarantee of equal opportunities and in compliance with current laws, interested students can ask for a personal interview in order to plan any compensatory and/or dispensatory measures, based on their specific needs and on teaching objectives of the discipline.
